These Isuzu engines will automatically raise the idle RPM when they begin to run hot... this is done to increase the cooling fan speed for more air flow thru the radiator..... is your temperature gauge showing above normal ...? if so, check your cooling system... I put a 160 degree thermostat in mine. (was 180)

Have you checked check fuel pressure and flow ? , low pressure is a fuel pump or pressure regulator fault , low flow is a blocked fuel filter .

may have something to do with timing advance or vacuum since it happens when you rev it up.

I have a 1997 lumina with 3.1L. the problem started with loss of power under load and p0300 code. check coils and vacuum leaks both OK.change spark plugs and wires.[same problem] check compression OK.

Since you changed the sensor we will assume it is working. When you disconnect it you put the computer in limp mode which stops it from using sensor values. If code 300 is the only code we will assume the coolant temp sensor and others are ok.
I would check fuel pressure with a gauge next.

When this stall or fails to start occurs have a pressure gage hooked up to the fuel injection pressure test port (top of engine in the pipe that supplies the fuel to injectors) and see if you are losing fuel pressure.

You have two coils on this engine. Test each wire for spark with the engine running. You'll find at least one wire not sparking. replace the coil that has the wire that's not sparking.

Revs up and down at low revs

you need to clean or replace your idle air control valve(IAC). The IAC allows your engine to idle smoothly by opening and closing a valve that allows air flow to the engine that is monitored by the computer. The IAC get dirty causing it to stick and move slower than it should which causes the up and down idle
