is it the fan knob or hot/cold knob that doesn't turn well?

Check the fuses, or the whole knob assembly went bad.

my knob broke from turning it because it became hard to turn--- i think the actuator is jammed or broke because even with a new knob, it turns freely and does not change selections.

DOWN THE BOTTOM OF THE GEAR KNOB THERE MIGHT BE A SMALL HOLE WHICH WILL BE A GRUB SCREW IF SO PLACE THE ALAN KEY INTO SMALL HOLE AND UNDO DO NOT REMOVE AS IT IS VERY HARD TO PUT BACK THEN THE GEAR KNOB SHOULD BE TURNED ANTICLOCKWISE AS IT IS ON A THREAD AND SIMPLY KEEP TURNING UNTILL IT COME OFF

Are you saying that they turn on high no matter what you have them set for? If so, then you probably need the controls the knobs connect to replaced. If you do this yourself, make sure the stove is unplugged or the power shut off to it before you start.

it's a screw on type...at first it's hard to turn but after turning counter clockwise real hard you'll be able to loosen the shifter iknob
