Flywheel keeps breaking

By breaking I assume you mean into pieces? The only thing that would cause this is a badly misaligned transmission. Any other problems would cause such vibration you would not drive the vehicle .

Replacing the transmission in my 2000 chevy truck 5.3 four wheel halfton got the tranny and the tourqe converter is still on the flywheel but can't figure a way too loosten the tourqes holding it to...

You'll need a box end wrench and a pry bar. Use the pry bar to hold the ring gear against the motor while you use the box end wrench to remove one bolt. Then rotate the engine with the bar to bring the next bolt around to where you can get the wrench on it. Repeat until you have the bolts off. Do not lose those bolts. If you do they will have to be ordered at the dealer.
When you put the torque convertor back in the transmission it has to go in two steps. It will slide in so far and then you will have to turn and push until it goes in again. If you don't do this the trans will not mount flush with the engine. When it's in the transmission properly it should sit about an inch inside the housing. Hope this helps.

Where is the flywheel located on this truck

its in the bell housing on the transmission the flywheel is bolted to the crankshaft and either the tourqe converter or clutch is bolted to that.

Engine removal

What is your question.? It should come out with the converter still bolted to the eng flywheel. If your pulling a front wheel drive vehicle motor you drop the trans out the bottom first, then pull the engine. You can also drop both together by dropping the support cradle. That is the best way and the way it was built and done in a dealership in some cases. Trans got go to have roon
