Sounds like it could be water in the gas which might be fixed with STP or similar gas treatment, or it needs a new fuel filter.

On my daughter 2000 beetle with 2.0 engine, the blue thermometer light comes on solid when you first crank it up because the coolant/engine is below operating temp. I have seen the red thermometer blink when the coolant is low.

check the fan and the fan sensor

You can check fuse #10 (10A) in the passenger compartment junction block, or check the wiring to the vehicle speed sensor on top of the transfer case. You can also check the wiring to the speedometer head or the speedometer itself. As for the wire on the gas pedal, it could be for the accelerator position sensor, but I can't find any relation between that and the speed sensor cicuit.

First thing I'd do is check actual temperature (you can have a shop do this with a heat sensing gun, or just tape a thermometer to the upper hose and read it.) Make sure the coolant level is full and that the electric fan is coming on. If the system is working properly, then you will need to check temp sensor and gauges.
This isn't a "fix" only because you need to find out whats happening in order to know what to fix.

that is not your thermostat, that has to be the temp sensor on your cylinder head, should be next to the intake manifold on the head. it has 1 cable. that sensor´s only job is to show you the temp of the engine on the temp dial in your instrument display
the thermostat is connected to a water hose that goes to your radiator, its also on the cyinder head, but thermostats are only mechanical doors regulated by temperature that allow hot water from the engine go cool down on the radiator.
