Well lucky for you VW only made one engine for a Jetta in 1987, 1.8 so the temperature sensor is on top of the water outlet on the rear of the cylinder head , also called water flange, it is the sensor with the most wires, normally 4 wires.

It should be located near the thermostat housing, near the top hose. In some cases, I have also seen them installed in one of the radiator tanks. I hope this helps! :)
