This is an oil PRESSURE issue, not oil level.
It is likely that when you stop, and the engine returns to idle, the oil pump is not creating enough pressure to push oil up to the top of the engine and lubricate the valve assembly.
I hate being the bearer of bad news, but the plastic impellers in most modern oil pumps do fail over time, especially if they've been disturbed by the work associated with an engine rebuild. Or, it could be that it is not sitting right on the pickup and feed tubes, and they are being blocked and causing pickup problems at low RPMs. The solution will involved dropping the pan to figure out what's going on with the pump.

How do I change oil ressure switch in 2004 chryler sebring lxi 2.7 engine

first off if the oil warning light is on, u need to check the oil pressure with a gauge with the engine at operating temp. and make sure oil pressure is up to spec. a bad switch can cause it to come on also. on the backside of the engine there is an aluminum heat shield covering the switch held on with 3 15mm bolts. after you remove the shield the switch can be removed with a deep socket. dont over tighten the new one when you put it in.

Remove the front mats, especially the one on the driver's foot well. If the carpet is wet, the heater core (matrix) needs replacing. When you buy the new one, ensure the two 'O' rings are the proper type and new as well. Otherwise, the thermostat is stuck closed or the water pump impeller is damaged. (Likely to hear a lot of noise from it, if so.) You can run the car without a thermostat at all if you live in temperate weather. (The gauge and fans operate from the temperature sensor which appears fine in your case as you've referred to them.)

2000 Chrysler Sebring V6 oil pressure light comes on when oil is warm. Replaced the seals and value cover and still the light comes on while Idel now drops below 5 rmp

Here is how I fixed the low oil pressure light problem without using any parts, only the labor to remove the oil pressure sensor is needed. I have an 02 seabring convertible 2.7L engine and I was having the same problem with my oil light coming on at an idle. I bought a new sensor replaced the old one and had the same problem. I than got a test kit and tested my oil pressure. It was very good, never lower than 11 PSI hot at an idle. I was reading about the wire connector modification, but I had an 02 and this mod came out in 98, surely Chrysler incorporated this mod on its newer vehicles. Well after checking more they did not and this is what turned me off on Chrysler products forever. For a manufacturer to produce a vehicle with a known defect and a modification fix and not incorporated this modification on its newer vehicles is inexcusable. After reading that the modification was to stop pressure build up in the sensor housing I decided to make a pressure release hole in the sensor housing. I took my old oil pressure sensor and using a 1/8 inch bit I drilled a small hole at the base of the plastic sensor tower. I put the old sensor in and drove for a week, no problem with my light coming on. To test further I took the new oil pressure sensor I bought and drilled a hole in it. Put it in and I've been driving for months and no problem with my oil pressure light coming on now.
