look for a vacuum leak. A large vacuum leak will do just what you described. I would listen for a leak first if you cant hear it and locate it then i would spray carb cleaner around the vacuum lines. If you have a leak it will pull the carb cleaner in and you will hear the engine rpm change.

A bad coolant temp sensor for the ECM will cause that problem ... they are cheap and easy to replace. One other possibility is a piece of carbon stuck in the EGR causing an internal vacuum leak ..
