There isn't one. The is no 'cylinder head temperature'. There would be no point in knowing that. There is a water coolant temperature sensor. That is the one that reports to the temperature gauge on the dash and tells you that you are overheating.

Sounds like more than one problem.
The ABS light is on to tell you the abs system is disabled due to a problem. Same goes for the traction control which could be related to the abs system problem. Both systems have to work together.
The temp gauge issue could be a faulty thermostat or the cooling system could be low on anti-freeze.
The shifting problem could be related to either system.

Check for air in the system that would do it or your water pump

First, check the relay for the cooling fans. Not sure about Mazdas but Fords have two coolant temperature sensors. One for the gauge or light on the dash and one for the fan relay. Check and make sure the sensor hasn't went bad or come unplugged. If these don't fix it the fan itself may be bad.

just below the filler cap there is a plastic type nut with a wire on it, the temp sender, change it as these tend to go wonky

yes its possible with the right sort of spares,used to do this a lot years ago with a harry moss bolt on goodie ,amp meters ,oil pressure gauges and temp gauges
