Bad erarth connection, very cvommon. Firstly check the main ground from the car battery to the car body, then check the black earth wire from the back light clusters to the inside of the boot floor. ensure they have good contacts and have not corroded etc.
Also the light cluster boards on these escort corrode, you may need to remove the back light cluster and clean it up ensure all the bulbs are the correct ones, a wrong bulb can also cause this fault as the earth connection is contacting another.
there is also an earth from the car battery to the gearbox and another 2 going to the starter and the altenator.
Usually this means the battery condition needs to be checked out. I would take the battery to Sears or a large auto parts store and ask them to test the condition. They do it for free.
When installing the battery, make sure the connections are shiney clean. Tell the store you take the battery to clean the posts. Also clean the cable ends.
If it still clicks the starter will need to be tested.

if you have the owners manual-look in the index for oil capacity, or fluid capacities. that should inform you of the oil type and capacity (if you change the filter as well, it will prob. take another half-quart or so. the manual should inform you. if no manual get on ford website, and search for escort 1.8L diesel van. precede with the year of model.it may inquire whether you have a/c, 4wd, etc. may need more oil, if so. good luck!
have you noticed anything else stop working on the car/van ie heating cigaretter lighter etc, if so it could be the fuse box, ford escorts are renowned for the fuse boxes to go. also another suggestion is to check all of the earth straps, mine used to cut out when i used to turn right because of a dodgy earth, then the fuse box packed in
