That sounds to me like your engine is seriously cutting out when accelerating. With the sensor out of exhaust, it should stay loud and still have power. I would check for a fuel or ignition problem. Have your fuel pressure tested, put a new fuel filter in, check your air filter. If fuel is good, have an ignition system analysis. Look for weak spark when accelerating.
If there were still exhaust blockage, it would have to be between the exhaust manifold and the oxygen sensor hole-that doesn't make sense. Check fuel pressure!
The the exhaust system must be clogged, how about the muffler?

Look at the AC pump. See if the belt is there, slipping, or the pully clutch engaging.
The center of the AC pully can be standing still while the outside turns. There is supposed to be a magnet that grabs the outside and locks it to the inside when you turn the AC on. The magnet could be bad or its clutch slipping.

If it seems to have a loss of power you may have a clogged exhaust, (muffler) system, again if you have a loss of power or it runs ruff check for a vacuum leak.
You have not addressed why the cat overheated. One cause is the engine running rich. If you have not fixed that then the problem will still be present. That appears to be the case due to lack of power. Describe the noise

My car never over heated, just one day had no power when i went to accelerate, and I think the noise is coming from the hole where the O2 sensor is supposed to be, it just sounds like air coming out really fast, then randomly switches back to sounding like a chopper(motorcycle)
