I'd concentrate my time & money,( $15.00 ) on ECT, "engine coolant temperature sensor" If your V6, is a 3.8, and not a 3.1 then it should be located (threaded in ) right below your throttle body at intake/block area. My guess is the sensor is telling the ECM that engine is already warm, thus only delivering enough fuel for a warmed up engine. Once engine is warm, all's well.

Its a V6 and your right it doesn't have a carb, but it acts like it does have a carb. Now, when I'm driving it will loose power (won't accelerate) and then stalls, then it takes a few minutes to get it to start again, like its flooded. Could it be some kind of air flow problem? If its a sensor how do you figure out which one it is?
Sounds like may be a sensor, what engine? By the way, your fuel injected, no carb, I believe.
