A week or so after buying the car my check engine light and my VCS light came on. Took it to get scanned and they said something about the gas cap.. Same thing happened a few weeks later and now the scan is showing all these other codes! Could it still just be a cap issue? The thing runs great with or without the lights on.. How worried should I be?

Your Air/Fuel Ratio sensor is failing. It is also called the Bank One sensor. The sensor itself is about $200 from a parts distributor and somewhat more than that at a Lexus parts department. Labor to remove the old sensor and replace it with the new one will also run you several hundred dollars.
If you're mechanically inclined, you can tackle this repair yourself. But you must first determine the exact location of the failed sensor. And be careful not to strip the threads in the manifold when you remove the old sensor.

My 2000 Lexus GS 400 just had the VSC/VSC off light and the check engine light come on. I would have to push the accelarator peddle all the way down to get it to go. Took it to the Toyota dealer and the code pulled up as the Throttle Position Sensor was out. Purchased one and having it put in. Will update if this fixes the problem.

Firstly I will talk about the 1st problem.
1. VSC/Engine check light/Trac off warning lamps:
These above warning lights have come on because there is a problem within one of these circuits, and because these circuits are collectively joined they will all come on.
You need to have a Lexus Diagnostic tool to find the circuit causing this fault, so if you have this tool let me know and I can send you the information, but if not then take it to a Lexus dealer for them to check it and find out which circuit is causing this problem.
However just check your brake fluid level and ensure it is at the correct level, if you have lost a reasonable amount of fluid top it up, then you maybe in need of some new brake pads which will cause these warning lamps to switch on also.
2. LCD/Instrument cluster displays resetting:
This is a problem which could be several different things, from a faulty ground connection to a main connection on the back of the cluster unit having come loose.
You need to have a multimeter to check the various circuits as well as a Lexus circuit testing lead which plugs into the main loom an from this you can test all the above faults which are happening to determine what is causing this problem.
However there is an ground wire which is mounted under the instrument cluster which has been known to come loose and this could be what has happened here, but you need to remove the cluster and instrument panel to check it and repair it.
