The usual reasons for intermittent fuel readings are that a wire is loose from the sending unit in the tank or on top of the tank, the connection is not making good contact. If you are getting no reading and it was intermittent or "false" reading at different levels of gas in the tank, the sender unit in the tank is broken. It needs to be replaced.

Check for a shorted wire to fuel sender.

First - I am amazed at the runaround they have given you over this - and all the work they have charged you for.
This seems to be stuck in "limp mode" - which is an electronic basic running mode when it doesn't get all the info from the sensors (of which there are too many on peugeots !)
The most likely to start with is any damage to the exhaust sections - or any catylist fitted. Diesels use them to reduce particulates, and can become blocked - causing backpressure and all sorts of running problems.
The cheapest solution to you is to take it to an exhaust specialist - and ask them to check it.
A bad knock can shatter a ceramic catylist - virtually blocking the entire system.
I have a peugeot - but after numerous electronic faults - will never buy another.

Sorry to say,but the fuel sending unit is the problem, the fuel tank will have to be lowered out of the vehicle to replace the unit.If the fuel sending unit is not available by itself you will have to replace the whole fuel pump assembley.

There is a recall on the 2003 instrument cluster on your Silverado. Check with the dealer before the warranty extension is over and you end up paying for a new cluster. As for the transmission, check the transmission fluid level and have the transmission scanned for any DTC codes that may indicate an issue like a faulty TPS sensor which is a simple that can cost you a expensive transmission repair.
Good luck and keep me posted.
