sounds like you need to replace the thermostat.

Is the water pump on your model belt driven?Maybe the same belt that powers the power steering pump is missing.
If the car only overheats in slow traffic or standing still....the fan at the rad may not be coming on.

The fault with the temperature guage will be that there is some loose connection from the sensor as it fails to read. So check the new sensor and connections.
The car seems to overheat as it is possible that the radiator needs a flushing. So please check the radiator ports, check on the timing of the engine, all the four wheels for free running and the brakes , if there is jamming while on the run that can strain the engine.

Does the cooling fan work with car parked, engine idling and temperature gauge climbs?
If the cooling fan does not work, the problem is electrical. But if the cooling fan works and temperature gauge climbs, you need to check up the water pump belt & tensioner, the water pump itself, and the cylinder head gasket. Just see the coolant recovery reservoir if there are air bubles inside coming from the cooling installation.
Let me know please what did you see:
1. Does the cooling fan work with car parked, engine idling and temperature gauge climbs?
2. The water pump belt & tensioner, the water pump itself, and the cylinder head gasket.
3. There are air bubles inside the coolant recovery reservoir coming from the cooling installation?
It's possible to have a bad cooling fan fuse and/or relay:
Fuse box in the engine compartment
Relay box no.# 2 in the engine compartment
R1 = Cooling fan relay no.# 3
R4 = Cooling fan relay no.# 2
R5 = Cooling fan relay no.# 1
