It is hard to tell at this range, but an intermittent fault like that sounds electrical. Is the trouble light blinking to tell you there is a trouble code stored? If so, get that read out to tell you where to start.
If no trouble code I wonder if it is the ECM itself at fault. I have a 94 Camry V6 which did exactly this act, and after much trouble it was traced to a faulty ECM. It must be replaced with one from exactly the same model, trans, and engine.
It could be something bigger $ like rings or valves but first check your spark plug wires and plugs. There is a chance you have a crack in one of the wires that ends up shorting out or a plug that is fouled - dirty just enough to cause problems. If so, replace them. Given what you said - sitting for a couple days and may have problems, that is a bit concerning if it's consistent meaning each time it sits for a few days you have the problem but when you use it each day, no issue. If it's that way, you should take it to a repair shop and have the compression checked on each cylinder.

You either have had the wrong valve seals installed, they are physically missing, or the valves are incorrect (too loose in the guides/stem too thin). The rocker arm seals will not contribute to your issue. If it did not have the oil smoke before you took the head off, the issue is with whatever the machine shop did. Valve seals have to fit TIGHT, or oil will go down the valve stem into the intake.
Take the head back to the machine shop & tell them to fix it. For free.

If its BLACK smoke it's unburned fuel. If it has carb, the carb float is too high or sunk. If it has fuel injection it's a stuck (open) fuel injector.
