Are you putting the thermostat in correctly? It it will not work backwards.
And to confirm that there isn't a different problem, take the thermostat out all together and see if it overheats.
Engine not fully warming up is not usually caused by the thermostat. Stats usually fail closed, not open.
You will want to check the water temperature sending unit or gauge after verify the water temperature with an external calibrated thermometer. You can attach and insulate the external thermometer to the housing where thermostat is located.
Reply back what you figure out. I will be happy to help you further.

put alot of antifreeze on the radiator.this just happened to me last week and now it is fine
bet it cools a bit while driving NO? and than when you stop the gage goes up
SOURCE: Cooling fans will not kick in.
The fans won't kick on then you need to replace the coolant temp sensor this runs your fans.

you might have a blown head casket try due a pressure test on each cylinder and sometimes you can take a spark plug out 1 by 1 and just tap the ket so it cranks and see if water comes out of the cylinder

that leaves the radiator or the head gasket, do a compression test, look at the plugs for a whitish deposit, sure sign of coolant, good luck
