On my 2004 deville i hade a ( check coolant level ) i filled my coolant but the warning did not go away ? i ckecked my level again , and it was low again ! i filled it again and the warning still did not go away !! i checked it again but it was fine . the next day i had no more warning what im trying to say is if you have a check coolant you better check ypur coolant even if you just filled it and for some reason my cadillac needs a few days for things to reset . however on another car that i had which was not a cadillac ( so it dosent mater what it was , ha ha ) there was a screw in sencer about half way down , on the side of the radeator with 2 wires going to it . i unscrewd it and put another one in .

No the light is linked to a sensor. There is a coolent sensor that tells you that the level is low. It sounds like the sensor has gone bad. And the sensor is located in the coolent tank. If it is bad from my understanding you have to replace the whole tank. But take a paper clip with the engine off and disconnect the wire harness from the sensor and jump the wires and see if the light goes off.
