Engine timing could be off.for the mercedes benz inline 6 cylinder ignition timing 7 - 11 degrees before top top dead center with idle set speed 650- 700 rpm. make sure engine tuned up before adjusting ignition timing.replace spark plugs and wires, replace distributor cap and rotor.change fuel filter and air filter and clean fuel injectors.if engine still stall out have fuel pressure checked should be 77 - 80 psi. if your car have the EZL CONTROL UNIT ADJUSTS TIMING AUTOMATICALLY NO ADJUSTMENT IS POSSIBLE.

This is for the 1990 190e 2.6. That's as new as my software goes. It may be the same, but I'm not absolutely sure.

Merc 190e

Ok there is a number of things that will stop it from revving past 3k from your description I would check the ignition timing for advance mechanical and vacuum .I don't know when you experience the fault or eg while driving or just free reviving in Neutral .
BTW 190e does not have limp home mode so there is a real problem. Hope this helps
