My 1993 mercedes benz 400 sel keep over heating, I replaced the water pump and the thermostat, flushed out the engine and the radiator. What else can I do? Please help.

When is the last time you had your thermostat replaced. This sounds like the thermostat is stuck, and when you turn on the defrost the heater is draining enough heat out of the engine to keep it from boiling over.
It could be a number of reasons, but start with the simple ones first. Maybe the thermostat ? , remove it from its housing and place it in a pan of cold water on the stove. Turn on the heat on a low light and see if it opens as the water gets hot. If no movement as it reaches boiling point it needs to be replaced.
1. leaks in the radiator / water hoses. have a radiator expert check your cooling system. water hoses are quite easy to replace. some would recommend replacing your radiator, some will suggest have it overhauled. if the price is almost the same, the go with the new radiator. 2. busted head gasket. this problem is not that serious, but needs immediate attention. due to blown head gasket, some oil and water that is circulating around your cylinder head will mix, thus the dark color of your water 3. cracks in the cylinder head. now this is a serious problem. have your cylinder head checked immediately. solution here varies from resurfacing to re-bore and re-sleeving of combustion chamber.
Check fuses, you are not supposed to "jump" MB thats why they have forever roadside assistance. You charge battery while disconnected and reconnect to start.
You need to replace the radiator pressure cap. I would also replace thermostat, drain and flush radiator to start. If it continues the water pump may be not pumping water. If the thermostat is stuck closed it wont allow water to cycle through the engine causing it to boil and the pressure cap is not holding the pressure allowing it to flow to the reservoir. So first change the thermostat and the radiator pressure cap.
