Clean the throttle body and service the idle air control valve assembly.
Remove the key from ignition switch, remove the negative (-) battery terminal for five minutes and relearn the idle air control valve. You can read my previous posts about how to do it.

On some models you can disable the alarm after you connect the battery by locking and unlocking the driver door with the key.I would disconnect the horn or pull the relay until you can get the alarm turned off.
Clutch judder on start off only
Your clutch is heat burned, the only way to fix this is to have a new clutch assembly installed along with machining the engine flywheel. To avoid this condition after repairs are done release the clutch as soon as possible, don't "slip" it excessively as you take off, as that turns it red hot and this is causing the chatter or "judder" as you call it. Cost to repair is about $800.00

Brake pedal goes straight 2 th floor!
You are definitely getting air into the system from somewhere. Look for wetness at all 4 wheels, around brake pipes and hoses and at the back of the master cylinder where it is bolted to the brake booster. You find where the fluid is getting out you find where the air is getting in.
