Oil pressure too high
nothing wrong ignore and stop worrying,change oil every 6000miles and use cheapest from supermarket,change oil filter every third oil change to save money and pollution of the disposal of old oil filter.If you worried about high pressure then stop beleaving the adverts for synthetic oil and putting in oil thickening agents like slick or duckhams.You could get the sender units changes for the oil pressure but just go for a burn and enjoy and stop worrying its only a car when all is said and done
I recently purchased a 96
I personally had a 308 ferrari gts for a couple years. They are assume cars. However italian cars are terrible when comes to electrical issues. There is nothing you missed , all you can do is trace the wires best you can, even if the fuse looks good, replace it anyway. This is very common. I had fuses that looked fine, and replaced it then it worked. Have a wire tester handy. Let me know.
Ferrari 355 1997 slow down
This problem is faced by many Ferrari

The slow down light is there in order to protect the $5000 Cats from thermal destruction when the engine management computer cannot find a reasonable mixture for engine operation. Unfortunately, many times it only serves to warn that the warning system itself has crapped out.
As per the problem which you mentioned that "hesitation when accelerating" with "slow down light flashing" this indicates the problem with the gas cap.But still all the possibilities needs to be checked.
Also you can get the car scanned at auto center for getting error code which will point towards the exact fault.

According to what you explain, there is some maf sensor defective or disconnected, the ferrari engine has high compression and forces the fuel to mix with the engine oil, this produces loss of oil pressure.
Check if the oil smells of fuel, check the sensor connections, also check the engine controller
