Ac problems
Either connection is bad to low pressure sensor or pressure sensor is faulty.

Cooling sensor
cooling sensors are located close to the temperature sender unit and will have a 2 wire connection
Battery wony stayed charged
Check the alternator, with a multimeter, is pushing correct charge after cleaning all connections to battery and alternator. If the alternator is working properly, then your battery may be faulty, get it tested at a battery shop. The shop will test the battery under load to see where it is for crank power.
1997 seville not getting enough gas to start
For the backfiring, there is a chemical additive process for cleaning the intake system of Northstar V-8's. This is suppose to be done at a Dealer and the solvent stays inside the engine 8 hours or more. It is rumored to be written as a service procedure in the Owners Manual.
Check your battery. A shorting battery will activate the antitheft system. Try a new fuelpump Relay
Low oil pressure and stop engine light after changing battery and alternator hear knocking now
I see more than one issue in your story. Its possible the computer lost memory and will need to relearn. But that would not explain the knocking noise. The oil pressure warning might explain the noise if oil pressure really is low. Running without the belt for even 5 min would not cause the problems you describe.
I would focus on the low oil pressure warning and the noise first.
How to replace an A/C clutch
Not too difficult. You may want to get a book for the details. The outer pulley comes off the shaft and there is a snap ring for the magnet. You have to shim the replacement to proper fit.
Car shuts off, battery light comes on, steering wheel locks up, all while driving
I am assuming you mean you loose power steering when the steering wheel locks up, which would be a normal event if the engine dies. Same goes for the battery light since the alternator would stop charging the battery.
Someone will need to figure out if you are loosing fuel or spark when the engine dies, then troubleshoot the problem. It may be difficult to find if the mechanic can not duplicate the problem in the shop.

listen to tenioner and idler pulleys for bearing going/are bad
also check all belt driven components for bearing/noise
