It's called Limp Home Mode - when the ECM detect an imminent fault that can incapacitate the car it protects it by going in this way. You need to take the car to a dealer to have it tested, only they have the equipment necessary to do the job.

The car's serial number is stamped into a brass plate mounted to the left inner fender under the hood of a 1956 model.

You have done everything except check the needle and seats. It is possible that there is debris stuck in the seat and starving the engine of fuel. How is your fuel filter? clean and serviceable?
Check your plugs, are they worn or dirty and sooty. If so give them a good clean and re check the gap.

Locate ignition amplifier box by following wires at distributor to black box. Disconnect neg . battery lead . Disconnect plug at black box. Remove box and take cover off. Ibside you will find a GM ignition module neatly wired to the plug that exits the box. Remove and have it tested at any major parts chain for free. If it is bad, have them find the part by crossreferencing the number. Don;t tell them it is for a jag or they might charge you more. Part should cost less than fifty bucks. I priced one over 15 years ago and it was over three hundred dollars.
