1996 Blazer is bucking and eventually stalling.
I would think the CAT. they tend to clog and make a rattling sound when driving .Seeing you say you did fuel lines witch is another issue with the vehicle in a snowy part of the country they rust out but your fuel pump must be working because who ever replaced the line would have known if the pump was bad they last 10 years then you have to up grade to the new pumps I'm not going to get in to that now.The only other thing it could be is the fuel regulator in witch case just replace all of the injectors and the regulator comes as a unit .But I think its more then likely the CAT is clogged .

This sounds like a fuel starvation issue.
Is the engine running smoothly? Have you checked the injectors? What warning lights are on the dashboard?
Running the engine at idle, put some injector cleaner through the system. The only other reason could be a faulty engine sensor of some kind.

If you have been in a lot of mud it can get caked up in your linkage and keep it from working properly

your transmission lock -up - converter valve is loosing pressure and it may be causing this problem that you have. it is in the transmission pan area on the valve body. they sell a replacement valve for this

It sounds like the shift fork is bent or there is so much wear in the transmission that the mainshaft endplay is excessive and the synchronizer sleeve is not engaging fully with the engagement teeth on 2nd gear. The synchronizer/blocking ring on 2nd is likely worn-out too. Figure on major expense. Not many shops still do manual transmission rebuilds. Few sources for parts. They are available, but nothing is cheap.
Changed fuel pump, ran great for 3 day's
seeing as you just changed the pump, can you hear the pump cycle when you first turn the key on? if not check all your plug in wire connections one my not have been in properly and came loose, hope this helps

Did you check the cables/wires on the AC controls behind the dash? Make sure none are loose, and/or the wires are all the way seated. If it's computer controlled, you might lookup the instructions on resetting the computer. Some you can just disconnect the battery for five minutes, others that causes issues for.

Your blazer has central fuel injection (CFI). You said you changed injectors, but your injector in inside the intake manifold, and only has one injector and a "spider" of nylon tubes from the central injector to each intake port. It is common for these spiders to break, causing fuel to leak into the inside of the manifold, and cause problems like you described. The spiders are available as reconditioned and are quite expensive,
